Eating can and should be enjoyable, tasty and good for you! While there is no recipe, much less a food, that is perfect for everyone, with a modification or two you should be able to make just about any recipe more appropriate for your unique metabolism and needs.
This recipe for Carne Guisada, a Texas variation of a traditional beef stew, is really simple and rather delicious. The hardest part was waiting for it to finish cooking as the aroma was permeating the entire house. I tried going outside but the ventilation fan was on so that didn’t work so well.
The best part is with 8-10 servings, there are always leftovers.
I mentioned adjustments. If you prefer to not expose yourself to flour, you can always layer this atop a small mound of rice and there are other thickening options available.
You may be wondering what to serve with it, I will be following this post with another one offering an excellent and easy to prepare side dish; Calabacitas (http://wp.me/p3hWct-iB).
I would love to hear what you think after you make this yourself.
